Prunes Power Balls

Power balls made from Raw prunes are quick energy snacks and even desserts. They are just like the date energy balls, but have a lower GI, hence are better for weight management. Also, by reducing the GI, these sweets become diabetic friendly and can decrease insulin spike. These are so super easy to make, that you can even involve your kids in cooking.

Ingredients:

- 1½ cups prunes
- 1 cup cashew and almonds
- Sea salt (optional)
- ½ cup unsweetened shredded coconut

 

 

How to make:

1. Grind the nuts in a food processor. Don’ grind them into flour, but fine enough to be combined into a dough.

2. Add dried prune and form a dough from it. Add sea salt if required

3. Pulse the dough a few times again , slightly damp your hands and shape it into 1 inch balls.

4. Place shredded coconut in a bowl and roll the balls, till it is properly covered by the coconut.

5. Store it in a fridge and have it as a snack anytime you feel sluggish.
