Ingredients:
1 cup whole wheat flour
3/4cup all purpose flour
½ cup ground flax seeds
1 ½ tsp baking powder
½ teaspoon baking soda
2 large eggs
½ cup pure maple syrup
1 cup low-fat buttermilk
¼ cup canola oil
1 tsp vanilla extract
1 ½ cup blueberries
Pinch of salt

Method:
- Preheat your oven to 200 degree celsius.Coat muffin cups with baking spray or line them with parchment paper.
- Add all the dry ingredients in a bowl and mix
- Whisk eggs and maple syrup in a bowl till properly smooth. Add buttermilk, oil, vanilla, and whisk evenly.
- Make a hole in the dry ingredients and stir in the wet ingredients slowly. Recommended to use a rubber spatula. Mix properly till the mixture is ribbon consistent. Fold in some blueberries.
- Scoop the batter into the well-greased muffin cups. You can sprinkle some maple syrup on the top.
- Bake the muffins till the tops are properly golden brown and if a toothpick is entered, it comes out clean. It will take around 20 minutes for the muffins to be ready. Let them cool in the pan for few minutes.
