Quinoa Vegetable Pulao Recipe

The superfood quinoa is a versatile ingredient that can even replace basmati rice. The quinoa and mixed vegetable pulao is a perfect quinoa recipe that can suit your Indian palates. It is a delicious protein rich and low carb pulao recipe which can be served as a main course. The nutty flavor of the rice is better than the sweetness and stickiness of our normal rice. It is also fit for lunchbox since it doesn’t dry out easily as regular rice

If you were on a weight loss diet and have shunned your favorite rice, then gorge on this quinoa pulao. You can serve it with delicious carrot raita.

Servings 2

Ingredients:

- Quinoa- 1 cup

- Water- 2 cups

- Onions, finely chopped- ½ cup

- Oil- 2 tsp

- Mixed vegetables, chopped - 1 cup (You can add vegetables of your choice)

- Cinnamon, Bay leaf- 1 piece each

- Cloves- 4

- Cumin seeds- ½ tsp

- Garlic, minced- 1 tsp

- Ginger, grated- ½ tsp

- Cardamom- 2-3 pods

- Finely chopped coriander

- Lemon- 1

- Salt- according to your taste

 

 

Directions:

- Heat oil in a pan, preferably nonstick. Add the cumin seeds. After the cumin seeds splutter, add the whole spices- bay leaf, cloves, cinnamon, cardamom. Fry them for 15-20 seconds and then add the finely chopped onions. Fry the onions for 3-4 minutes or until the onions are soft. Don’t wait till the onions turn golden brown. Add the ginger and garlic and sauté for about 2 minutes.

- Add the mixed vegetables and coriander, cook for 4- 5 minutes or till the vegetables are almost cooked.

- Add the quinoa to this mixture. Add 2 cups of water and salt.

- Lower the heat and cook the mixture covered for about 5 minutes

- The quinoa will be soft and fluffy by this time. The rest of vegetables will be done now too.

- Garnish your pulao with coriander leaves. Squeeze a little of lemon on top. 

- Serve hot with delicious carrot raita.
