Artichoke otherwise known as cardoon is native to Mediterranean area. Artichoke was reported to be used as a food by ancient Romans and Greeks. The edible portion of the plant consists of the flower buds before the flowers come into bloom. Studies have shown that artichoke flower has maximum antioxidant property. Artichoke helps in improving digestion, liver and gall bladder functioning raises the ratio of HDL to LDL. It in turns helps to reduce the cardiac risk factor. Artichoke is also known to improve the symptoms of IBS (Irritable Bowel Syndrome).
